
Carrots are a great vegetable to pair with many dinners, particularly a roast dinner. The fibre in carrots can help keep blood sugar levels under control, plus carrots are packed with vitamin A and beta-carotene. While carrots may seem like incredibly easy vegetables to prepare, doing so wrong will not give you the best-tasting results.
Boiling or roasting seems to be the most popular way of cooking carrots, but Tiffy of food blog Tiffy Cooks recommends blanching them before leaving the vegetable to simmer in a glaze that includes one crucial ingredient. If you're adding carrots to your Sunday roast dinner, it's worth giving this 10-minute recipe a go.
For this recipe, you can use any carrots of your choice. Tiffy noted that she likes to use peeled organic carrots, but baby carrots will also work too.
When it comes to the glaze, the cooking pro claimed that soy sauce is the "secret ingredient", which gives the sauce a savoury and umami flavour.
She added, "This sauce honestly tastes fantastic with everything, and you can also use it with broccoli, asparagus, and even potatoes."
Ingredients- 500g carrots, peeled
- Four tablespoons of honey
- Two tablespoons of soy sauce
- Half a tablespoon of red chilli flakes (optional)
- Two tablespoons of butter
Start by filling a pot with water and seasoning it with salt. Once the water is boiling, add the carrots and blanch for three minutes. Rest in ice water.
The next step is to make the glaze. For this, you will need to add the soy sauce, honey, butter, and red chilli flakes to a pan. You can skip or reduce the amount of red chilli flakes if you're not a fan of spice.
Turn the heat to medium-high and bring the sauce to a simmer for about two minutes.
After, add the carrots back in and saute on high heat for another two minutes.
